UNGKEP AYAM

Ungkep Ayam Vegan Recipe

Preparation time: 10 minutes
Cooking time: 20 minutes
Serving: 4 – 5 pax

Ingredients:

  • 400g hericium mushrooms
  • 2 lemongrasses (mashed)
  • 2 cups vegetable stock water
  • 1/4 coconut milk
  • Salt
  • Sugar
  • 1/2 tamarind slice (optional)
  • Oil
  • 1 tsp coriander powder
  • 1 tsp fennel powder
  • 1 tsp cumin powder
  • Mashed/ground ingredients:
    • 4 cloves garlic
    • 5 onions
    • 1 inch of fresh turmeric
    • 1 inch ginger
    • 10 bird’s eye chilli

Notes:

  • Wash, soak and squeeze the hericium mushrooms until the soaking water becomes clear, shred and marinade with salt and turmeric powder
  • Prepare kaffir lime leaves and red chilli for garnishing

Cooking method:

  • Grind all the ingredients that need to be ground. Grind the ingredients with little oil. Set a aside
  • Prepare a pan, put a little oil, add lemongrass and ground ingredients. Sauté until fragrant and oil separately
  • Then, add fennel powder, cumin powder, coriander powder and mix well
  • Add the marinade hericium mushrooms
  • Add water and stir well
  • Add tamarind slice, sugar, salt and a little seasoning (optional). stir for a while and let it simmer until the gravy thickens
  • Then turn off the heat, add the kaffir lime leaves and stir. Ready to serve with a little garnish of kaffir lime leaves and red chillies

Masa memasak: 20 minit
Hidangan: 4 – 5 orang

Bahan-bahan:

  • 400g cendawan kepala monyet
  • 2 batang serai (dititik)
  • 2 cawan air stok sayuran
  • 1/4 kotak santan
  • Garam
  • Gula
  • 1/2 asam keping (pilihan)
  • Minyak
  • 1 sudu kecil serbuk ketumbar
  • 1 sudu kecil serbuk jintan manis
  • 1 sudu kecil serbuk jintan putih
  • Bahan tumbuk/kisar:
    • 4 ulas bawang putih
    • 5 biji bawang merah
    • 1 inchi kunyit segar
    • 1 inchi halia
    • 10 biji cili padi

Nota:

  • Basuh, rendam dan perah cendawan kepala monyet sehingga air rendaman menjadi jernih, carikkan dan perap dengan garam dan serbuk kunyit
  • Sediakan daun limau purut (racik halus) dan cili merah (potong bulat halus) untuk hiasan

Langkah-langkah menyedikan:

  1. Kisar semua bahan yang perlu dikisar/ditumbuk. Kisar bahan letak sedikit minyak. Ketepikan seketika
  2. Sediakan kuali,letak sedikit minyak, masukkan serai dan bahan kisar tadi. Tumis sehingga naik bau dan pecah minyak
  3. Lepastu, masukkan serbuk jintan manis, serbuk jintan putih, serbuk ketumbar dan kacau sebati
  4. Masukkan cendawan kepala monyet yang sudah perap tadi
  5. Masukkan air dan kacau sabati
  6. Masukkan asam keping, gula, garam dan sedikit perasa(pilihan) . kacau seketika dan biarkan reneh sehingga kuahnya pekat
  7. Kemudian tutup api, masukkan daun limau purut dan kacau. Sedia untuk dihidang bersama sedikit hiasan daun limau purut dan cili merah

After Chef taught the cooking method must tumis the bawang merah dulu baru garlic & ginger follow by chilli paste. From there I can forsee the recipes if they don't follow the right sequence, I doubt it will turn out well. Another method I learnt from Chef is deep frying, the food need to float & the oil must be hot so the food won't be oily & soggy.

I learnt alot from you! Not only on techniques but also the essence each flavour brings to the dish. I'm not a vegan but now I'm more aware of the ingredients and I do keep a look out for them. Through your class, I learnt to appreciate vegetables which I never had growing up such as Black Fungus, lion mane mushrooms, jantung pisang and etc. I also stop buying pasta tomato sauce. Now, all my soup base is from vegetable stock that I learnt from your class. We have also tried plant base milk thanks to you.
