MASALA NANGKA MUDA | RAW JACKFRUIT MASALA – CHEF DAVE

Preparation time: 20 Minutes
Cooking time: 30 Minutes
Serving: 3 – 4 Servings

Ingredients to Stew:

  • 250g young jackfruit (cut into small pieces and boiled)
  • Turmeric powder
  • Salt as needed

Ingredients to Stir-Fry:

  • 4 tbsp Yashkri coconut oil
  • 1 cinnamon stick
  • 2 cardamoms
  • A pinch cumin
  • 4 cloves
  • 2 stalk curry leaves
  • 2 onion (sliced)
  • 2 green chilies
  • 1 tbsp garlic and ginger paste

Other Ingredients:

  • 1 tomato (cut into small pieces)
  • ½ tsp turmeric powder
  • 1 tbsp chili powder
  • 1 tbsp coriander powder
  • ½ tbsp garam masala
  • ½ tsp black pepper
  • Salt as needed
  • Brown sugar as needed
  • A little coriander leaves

Cooking method:

  1. Prepare a pot, add water and let it boil, then add young Jackfruit, salt and a little turmeric powder. Boil up to 80% cooked. Then strain and set aside.
  2. Prepare a pan, add Yashkri coconut oil. Then stir-fry all the stir-fry ingredients until fragrant.
  3. Then add the tomatoes and make sure the tomatoes are crushed and smooth.
  4. Then add turmeric powder, chili powder, coriander powder, garam masala, black pepper and enough salt. Mix well.
  5. Put a little water and simmer for a while until all the spices are cooked. Then add a little brown sugar. Stir until the oil breaks.
  6. Add the boiled young jackfruit. Mix well.
  7. Put a little more water and simmer again until the gravy is a little dry. Add some coriander leaves and mix well.
  8. Adjust taste and ready to serve.

Masa memasak: 30 Minit
Hidangan: 3 – 4 Orang

Bahan – bahan Rebus:

  • 250g Nangka muda (potong kecil dan rebus)
  • Serbuk kunyit
  • Garam secukupnya

Bahan – bahan Tumis:

  • 4 sudu besar minyak kelapa
  • 1 batang kulit kayu manis
  • 2 buah pelaga
  • Secubit jintan manis
  • 4 biji bunga cengkih
  • 2 batang daun kari
  • 2 bawang merah (dihiris)
  • 2 cili hijau
  • 1 sudu besar pes bawang putih dan halia

Bahan – bahan Lain:

  • 1 tomato(potong kecil)
  • ½ sudu kecil serbuk kunyit
  • 1 sudu besar serbuk cili
  • 1 sudu besar serbuk biji ketumbar
  • ½ sudu besar garam masala
  • ½ sudu kecil lada hitam
  • Garam secukupnya
  • Gula merah secukupnya
  • Sedikit daun ketumbar

Cara memasak:

  1. Sediakan periuk, masukkan air dan biarkan ia mendidih, kemudian masukkan Nangka muda, garam dan sedikit serbuk kunyit. Rebus sehingga 80% masak. Kemudian tapis dan ketepikan.
  2. Sedia kuali, masukkan minyak Yashkri. Kemudian tumis kesemua bahan tumis sehingga naik bau.
  3. Kemudian masukkan tomato dan pastikan tomato itu hancur.
  4. Lepastu masukkan serbuk kunyit, serbuk cili, serbuk biji ketumbar, garam masala, lada hitam dan garam secukupnya. Gaul rata.
  5. Letak sedikit air dan reneh seketika sehingga rempah semua masak. lepastu masukkan sedikit gula merah. Kacau sebati sehingga pecah minyak.
  6. Masukkan nangka muda yang telah rebus tadi. Gaul sebati.
  7. Letak sedikit lagi air dan reneh lagi sehingga kuah sedikit kering. masukkan sedikit daun ketumbar dan kacau sebati.
  8. Adjust rasa dan sedia untuk dihidang.

After Chef taught the cooking method must tumis the bawang merah dulu baru garlic & ginger follow by chilli paste. From there I can forsee the recipes if they don't follow the right sequence, I doubt it will turn out well. Another method I learnt from Chef is deep frying, the food need to float & the oil must be hot so the food won't be oily & soggy.

I learnt alot from you! Not only on techniques but also the essence each flavour brings to the dish. I'm not a vegan but now I'm more aware of the ingredients and I do keep a look out for them. Through your class, I learnt to appreciate vegetables which I never had growing up such as Black Fungus, lion mane mushrooms, jantung pisang and etc. I also stop buying pasta tomato sauce. Now, all my soup base is from vegetable stock that I learnt from your class. We have also tried plant base milk thanks to you.
