MASALA NANGKA MUDA | RAW JACKFRUIT MASALA – CHEF DAVE

Ingredients to Stew:
- 250g young jackfruit (cut into small pieces and boiled)
- Turmeric powder
- Salt as needed
Ingredients to Stir-Fry:
- 4 tbsp Yashkri coconut oil
- 1 cinnamon stick
- 2 cardamoms
- A pinch cumin
- 4 cloves
- 2 stalk curry leaves
- 2 onion (sliced)
- 2 green chilies
- 1 tbsp garlic and ginger paste
Other Ingredients:
- 1 tomato (cut into small pieces)
- ½ tsp turmeric powder
- 1 tbsp chili powder
- 1 tbsp coriander powder
- ½ tbsp garam masala
- ½ tsp black pepper
- Salt as needed
- Brown sugar as needed
- A little coriander leaves
Cooking method:
- Prepare a pot, add water and let it boil, then add young Jackfruit, salt and a little turmeric powder. Boil up to 80% cooked. Then strain and set aside.
- Prepare a pan, add Yashkri coconut oil. Then stir-fry all the stir-fry ingredients until fragrant.
- Then add the tomatoes and make sure the tomatoes are crushed and smooth.
- Then add turmeric powder, chili powder, coriander powder, garam masala, black pepper and enough salt. Mix well.
- Put a little water and simmer for a while until all the spices are cooked. Then add a little brown sugar. Stir until the oil breaks.
- Add the boiled young jackfruit. Mix well.
- Put a little more water and simmer again until the gravy is a little dry. Add some coriander leaves and mix well.
- Adjust taste and ready to serve.

Bahan – bahan Rebus:
- 250g Nangka muda (potong kecil dan rebus)
- Serbuk kunyit
- Garam secukupnya
Bahan – bahan Tumis:
- 4 sudu besar minyak kelapa
- 1 batang kulit kayu manis
- 2 buah pelaga
- Secubit jintan manis
- 4 biji bunga cengkih
- 2 batang daun kari
- 2 bawang merah (dihiris)
- 2 cili hijau
- 1 sudu besar pes bawang putih dan halia
Bahan – bahan Lain:
- 1 tomato(potong kecil)
- ½ sudu kecil serbuk kunyit
- 1 sudu besar serbuk cili
- 1 sudu besar serbuk biji ketumbar
- ½ sudu besar garam masala
- ½ sudu kecil lada hitam
- Garam secukupnya
- Gula merah secukupnya
- Sedikit daun ketumbar
Cara memasak:
- Sediakan periuk, masukkan air dan biarkan ia mendidih, kemudian masukkan Nangka muda, garam dan sedikit serbuk kunyit. Rebus sehingga 80% masak. Kemudian tapis dan ketepikan.
- Sedia kuali, masukkan minyak Yashkri. Kemudian tumis kesemua bahan tumis sehingga naik bau.
- Kemudian masukkan tomato dan pastikan tomato itu hancur.
- Lepastu masukkan serbuk kunyit, serbuk cili, serbuk biji ketumbar, garam masala, lada hitam dan garam secukupnya. Gaul rata.
- Letak sedikit air dan reneh seketika sehingga rempah semua masak. lepastu masukkan sedikit gula merah. Kacau sebati sehingga pecah minyak.
- Masukkan nangka muda yang telah rebus tadi. Gaul sebati.
- Letak sedikit lagi air dan reneh lagi sehingga kuah sedikit kering. masukkan sedikit daun ketumbar dan kacau sebati.
- Adjust rasa dan sedia untuk dihidang.
