STIR FRY BOK CHOY | BOK CHOY TUMIS ALA CINA – CHEF DAVE

Preparation time: 10 Minutes
Cooking time: 10 Minutes
Serving: 3 Servings

Ingredients:

  • 4 sayur bok choy (cut into small pieces)
  • A little oil
  • water (boiled)
  • 4 shitake mushrooms (sliced)
  • Sauce:
    • 1/3 tsp salt
    • 1/3 tsp mushroom seasoning powder
    • 1/3 tsp sugar
    • 3 tsp soy sauce
    • 1 tsp vegetarian oyster sauce
    • 1 tsp cornstarch
    • 3 tsp water
      • *mix all the ingredients above. Stir well and set aside.
  • Stir-fry ingredients:
    • 2 cloves garlic (finely chopped)
    • 1 spring onion (finely sliced)
    • 2 red chilies (sliced)
    • 1 inch ginger (finely chopped)

Cooking method:

  1. Prepare a pot, add water and a little oil then let it boiling and add bok choy and shitake mushrooms. Do not boil for too long. Lift and set aside.
  2. Mix all the sauce ingredients. Stir well and set aside.
  3. Prepare another pan, sauté garlic, spring onion, red chili and ginger. Stir until fragrant.
  4. Add the bok choy and shitake mushroom that has been boiled.
  5. Then add the sauce. Stir well and taste. Ready to be served.

Hidangan: 3 Orang

Bahan – bahan:

  • 1 biji terung (potong wedges)
  • 4 tangkai bok choy (potong kecil)
  • Sedikit minyak
  • Air (rebus)
  • 4 cendawan shitake (hiris)
  • Sos :
    • 1/3 sudu kecil garam
    • 1/3 sudu kecil serbuk perasa cendawan
    • 1/3 sudu kecil gula
    • 3 sudu kecil kicap soya
    • 1 sudu kecil sos tiram vegetarian
    • 1 sudu kecil tepung jagung
    • 3 sudu kecil air
      • *campurkan kesemua bahan diatas. Kacau sebati dan ketepikan.
  • Bahan tumis :
    • 2 ulas bawang putih(cincang halus)
    • 1 tangkai daun bawang (hiris halus)
    • 2 cili merah(hiris)
    • 1 inchi halia (cincang halus)

Cara memasak:

  1. Sediakan periuk, masukkan air dan sedikit minyak kemudian biarkan ia mendidih dan masukkan sayur bok choy dan cendawan shitake. Jangan rebus terlalu lama. Angkat dan ketepikan.
  2. Campurkan kesemua bahan sos. Kacau sebati dan ketepikan.
  3. Sediakan kuali lain, tumis bawang putih, daun bawang, cili merah dan halia. Kacau sehingga naik bau.
  4. Masukkan sayur bok choy dan cendawan yang telah rebus tadi.
  5. Lepastu masukkan sos. Kacau sebati dan rasa. Sedia untuk dihidang.

After Chef taught the cooking method must tumis the bawang merah dulu baru garlic & ginger follow by chilli paste. From there I can forsee the recipes if they don't follow the right sequence, I doubt it will turn out well. Another method I learnt from Chef is deep frying, the food need to float & the oil must be hot so the food won't be oily & soggy.

I learnt alot from you! Not only on techniques but also the essence each flavour brings to the dish. I'm not a vegan but now I'm more aware of the ingredients and I do keep a look out for them. Through your class, I learnt to appreciate vegetables which I never had growing up such as Black Fungus, lion mane mushrooms, jantung pisang and etc. I also stop buying pasta tomato sauce. Now, all my soup base is from vegetable stock that I learnt from your class. We have also tried plant base milk thanks to you.
