Nyonya Laksa Vegan Recipe
Preparation time: 20 minutes

Serving: 3 – 4 pax
Ingredients:
- 2 tbsp sambal paste
- 1 fresh red chilli
- 1 lemongrass
- 1/2 inch turmeric
- 1 inch galangal
- 5 nos shallots
- 2 cloves garlic
- 1 candlenut
- 1 tbsp curry powder
- 1 litre vegetable stock
- 1/2 cup coconut milk
- Salt as needed
- Seasoning “Pasti Sedap”
- Taupok
- Fish ball
- Taugeh
- Cucumber
- Eggplant
- Fried tofu
- Fried shallots
- Red chilli
- Lime
Cooking method:
- Boil enough mee / mee hoon
- Add onion, red chilli, garlic, sambal paste, lemongrass stalk, turmeric, galangal and put a little water in a blender and grind
- Fry eggplant, long beans and tofu and save
- Put the ground paste in a pan and saute
- Saute until it breaks up the oil
- Add the existing 3/4 coconut milk and cook for a while
- Insert cover and fish balls
- Add enough salt
- The fried tofu, cut it into thin squares and save it for decoration later
- Put the remaining coconut milk in the cooked laksa
- The laksa gravy is ready
- You can garnish with eggplant, long beans and tofu that were fried earlier and serve according to your own taste with sambal and lemon

Bahan-bahan:
- 2 sudu besar pes sambal
- 1 biji cili merah segar
- 1 biji serai
- 1/2 inci kunyit
- 1 inci lengkuas
- 5 biji bawang merah
- 2 ulas bawang putih
- 1 biji kemiri
- 1 sudu besar serbuk kari
- 1 liter stok sayur
- 1/2 cawan santan
- Garam mengikut keperluan
- Perencah pasti sedap
- Taupok
- Bebola ikan
- Taugeh
- Timun
- Terung
- Tauhu goreng
- Bawang merah goreng
- Cili merah
- Limau
Langkah-langkah menyedikan:
- Rebus mee / bee hoon secukupnya
- Masukkan bawang besar, cili merah, bawang putih, pes sambal, batang serai, kunyit, lengkuas dan masukkan sedikit air dalam pengisar dan kisar
- Goreng terung, kacang panjang dan tauhu dan simpan
- Masukkan pes kisar ke dalam kuali dan tumis
- Tumis hingga pecah minyak
- Masukkan 3/4 santan sedia ada dan masak seketika
- Masukkan penutup dan bebola ikan
- Masukkan garam secukupnya
- Tauhu yang telah digoreng, potong segi empat nipis dan simpan untuk hiasan nanti
- Masukkan baki santan ke dalam laksa yang telah dimasak
- Kuah laksa sudah siap
- Boleh hiaskan dengan terung, kacang panjang dan tauhu yang digoreng tadi dan hidangkan mengikut citarasa sendiri bersama sambal dan limau
