NYONYA KARI KAPITAN – CHEF DAVE

Preparation time: 15 Minutes
Cooking time: 30 Minutes
Serving: 4 – 5 Servings

Ingredients:

  • Marinate ingredients:
    • 500g Hericium mushrooms (dried/frozen)
    • A little turmeric powder
    • 4-5 tbsp oil
    • A little bit salt.
    • *Mix all the ingredients above and fry until browned. Remove and set aside.
  • Ground ingredients:
    • 4 dry chilies
    • (Cut diagonally and soak with hot water)
    • 3 red chilies
    • 1 ½ inches galangal
    • 1 ½ inches fresh turmeric
    • 4 candle nuts
    • 2 inches ginger
    • 2-3 onion / 4-5 small onions (cut into small pieces)
  • Other ingredients:
    • 3 lemongrass stalks (Tap)
    • A little vegan belacan
    • 1 potato (cut into cubes)
    • A little tamarind juices.
    • ½ cup coconut milk
    • Salt and brown sugar as needed
    • A few kaffir lime leaves (thinly sliced)
  • Garnishing:
    • A little red chili (sliced)

Cooking method:

  1. Grind first all the ingredients until smooth. Set aside.
  2. Mix the hericium mushrooms with turmeric powder and enough salt.
  3. Then prepare a pot, put oil and fry until brown. Remove and set aside
  4. Use the same oil, stir-fry the ground ingredients until the oil breaks. Add more oil if necessary.
  5. Then add lemongrass and vegan belacan. Stir again.
  6. Add tamarind water and cubed potatoes.
  7. Let it simmer and the potatoes to cook well. Add in salt and brown sugar.
  8. Once the potatoes are well cooked, then can add the mushroom that we fried then stir well.
  9. Add in coconut milk, kaffir lime leaves, mix well. Can add water if needed and then adjust the seasoning then it can be served. Garnish with some red chili slices.

Masa memasak: 30 Minit
Hidangan: 4 – 5 Orang

Bahan – bahan:

  • Bahan perapan :
    • 500g cendawan kobis bunga (kering/ frozen)
    • Sedikit serbuk kunyit
    • 4-5 sudu besar minyak
    • Sedikit garam.
    • *gaul kesemua bahan diatas dan goreng sehingga keperangan. Angkat dan ketepikan.
  • Bahan Kisar :
    • 4 tangkai cili kering
    • (potong serong dan rendam dengan air panas)
    • 3 biji cili merah
    • 1 ½ inci lengkuas
    • 1 ½ inci kunyit segar
    • 4 biji buah keras
    • 2 inchi halia
    • 2-3 biji bawang merah / 4-5 bawang kecil (potong kecil)
  • Bahan-bahan lain:
    • 3 batang serai (titik)
    • Sedikit vegan belacan
    • 1 biji kentang(potong kiub)
    • Sedikit perahan air asam jawa.
    • ½ cawan santan
    • Garam dan gula perang secukupnya
    • Sedikit daun limau purut (potong nipis)
  • Hiasan :
    • Sedikit cili merah (cili nipis)

Cara memasak:

  1. Giling/kisar terlebih dahulu kesemua bahan kisar sehingga lumat. Ketepikan.
  2. Gaulkan cendawan kobis bunga bersama serbuk kunyit dan garam secukupnya.
  3. Kemudian sediakan periuk, letak minyak dan goreng sehingga warna keperangan. Angkat dan ketepikan
  4. Gunakan minyak yang sama, tumis bahan yang telah digiling/kisar sehingga pecah minyak. Tambah minyak lagi jika perlu.
  5. Kemudian masukkan serai dan vegan belacan. Kacau lagi.
  6. Masukkan air asam jawa dan kentang yang telah dipotong kuib.
  7. Biarkan ia reneh dan kentang menjadi empuk. Masukkan garam dan gula perang secukupnya.
  8. Bila kentang dah empuk, masukkan cendawan bunga kobis yang telah digoreng tadi. Kacau sebati.
  9. Masukkan santan, daun limau purut. Kacau sebati. Boleh tambah air jika perlu. adjust rasa dan sedia untuk dihidang. Letakkan sedikit hirisan cili merah sebagai hiasan.

After Chef taught the cooking method must tumis the bawang merah dulu baru garlic & ginger follow by chilli paste. From there I can forsee the recipes if they don't follow the right sequence, I doubt it will turn out well. Another method I learnt from Chef is deep frying, the food need to float & the oil must be hot so the food won't be oily & soggy.

I learnt alot from you! Not only on techniques but also the essence each flavour brings to the dish. I'm not a vegan but now I'm more aware of the ingredients and I do keep a look out for them. Through your class, I learnt to appreciate vegetables which I never had growing up such as Black Fungus, lion mane mushrooms, jantung pisang and etc. I also stop buying pasta tomato sauce. Now, all my soup base is from vegetable stock that I learnt from your class. We have also tried plant base milk thanks to you.
