MEE KARI | CURRY MEE WITH AMMAYI ft CHEF DAVE
Preparation time: 30 Minutes

Serving: 8-9 Servings
Ingredients:
- 1kg noodles
- Some vegan fish balls
- Fried tofu puffs
Ingredients to Grind:
- 2 lemongrass (sliced)
- 1 ichi ginger
- 1 inch galangal
- 6 nos onions
- 4 nos garlic
- 2 red chili
- 2-3 candlenuts
- 5 dried chilies
- 1 cup groundnut oil (Yashkri)
- *Grind all the above ingredients and set aside.
Ingredients to Stir-Fry:
- A little groundnut oil
- 1 cinnamon stick
- 3 star anise
- 3 cloves
- 4-5 cardamom seeds
- 2 stalks curry leaves
- 4 tbsp meat curry powder (dissolve with a little water)
- Salt as needed
- 1 cup hericium mushrooms
- 2 cup coconut milk
- 2 cup water
- Brown sugar as needed
- Mushroom seasoning as needed
- 1 -2 tamarind slice
Garnishing Ingredients:
- A little bean sprouts
- A little babycorn
- A little green mustard
- *boil for a while and remove. Set aside.
- A few long beans (cut, fried and set aside)
- 1-2 eggplants (cut, fried and set aside)
- 4-5 pcs tofu (cut in half and fry. Set aside)
- A little fried onion
- A few slices red chili
- A little bit lime
Cooking method:
- Saute cinnamon stick, cardamom, cloves, star anise and curry leaves first. Sauté until fragrant.
- Add the ground ingredients and stir-fry until the oil breaks. After that, add the meat curry powder mixture. Stir until oil breaks again.
- Add hericium mushrooms, vegan fish balls and fried tofu. Stir again. Then add coconut milk and water.
- Put salt, brown sugar and mushroom seasoning. Stir well.
- Add tamarind slices, let it boil and stir. Taste and set aside.
- Prepare another pot, add water and put a little oil. let it boil for a while. Then add bean sprouts, green mustard and babycorn. Remove and soak in cold water. Strain and set aside.
- Then, boil the noodles for a while and take out and soak in cold water. Strain and set aside
- Fry long beans, tofu and eggplant for a while. Fry until cooked and set aside.
- Prepare to serve and eat together.

Bahan – bahan:
- 1kg mee kuning
- Sedikit bebola ikan vegan
- Sedikit tauhu goreng
Bahan – bahan Kisar:
- 2 batang serai (Hiris)
- 1 ichi halia
- 1 inchi lengkuas
- 6 biji bawang merah
- 4 ulang bawang putih
- 2 batang cili merah
- 2-3 biji buah keras
- 5 cili kering
- 1 cawan minyak kacang tanah
- *Kisar kesemua bahan diataas dan ketepikan.
Bahan – bahan Tumis:
- Sedikit minyak kacang tanah
- 1 batang kulit kayu manis
- 3 kuntum bunga lawang
- 3 kuntum bunga cengkih
- 4-5 biji buah pelaga
- 2 tangkai daun kari
- 4 sudu besar serbuk kari daging (larutkan dengan sedikit air)
- Garam secukupnya
- 1 cawan cendawan kepala monyet
- 2 cawan santan pekat
- 2 cawan air
- Gula merah secukupnya
- Perasa cendawan secukupnya
- 1 -2 asam keping
Bahan – bahan Hiasan:
- Sedikit taugeh
- Sedikit jagung muda
- Sedikit sawi
- *rebus seketika dan angkat. Ketepikan.
- Sedikit kacang Panjang ((potong, goreng dan ketepikan)
- 1-2 terung(potong, goreng dan ketepikan)
- 4-5 keping tauhu (belah dua dan goreng. Ketepikan)
- Sedikit bawang goreng
- Sedikit hirisan cili merah
- Sedikit limau kasturi
Cara memasak:
- Tumis dahulu kulit kayu manis, buah pelaga, bunga cengkih, bunga lawang dan daun kari. Tumis sehingga naik bau.
- Masukkan bahan kisar dan tumis sehingga pecah minyak. selepas itu, masukkan bancuhan serbuk kari daging. Kacau sehingga ia pecah minyak sekali lagi.
- Masukkan cendawan kepala monyet,bebola ikan vegan dan tauhu goreng. Kacau lagi. Kemudian masukkan santan dan air.
- Letakkan garam, gula merah dan perasa cendawan. Kacau sebati.
- Masukkan asam keping, biarkan ia mendidih dan kacau. Rasa dan ketepikan.
- Sediakan periuk lain, masukkan air dan letak sedikit minyak. biarkan ia mendidih. Lepastu masukkan taugeh, sawi dan jagung muda. Angkat dan rendam seketika dengan air sejuk. Tapis dan ketepikan.
- Lepastu, celur mee kuning seketika dan angkat lalu rendam dengan air sejuk. Tapis dan ketepikan
- Goreng seketika kacang panjang, tauhu dan terung. Goreng sehingga masak dan ketepikan.
- Sediakan untuk dihidang dan makan bersama.
