MEE GORENG MAMAK VIRAL VEGAN RECIPE

Ingredients for fritter:

  • 1 cup wheat flour                                                                                                            
  • 1 handful of kucai                                                                                                            
  • 2 onion                                                                                                
  • 1/2tsp Salt                                                                                                         
  • 1/2tsp Sugar                                                                                                     
  • 1tsp Dried vegetable shrimp                                                                                                       
  • 1/3tsp Turmeric Powder                                                                                               
  • 1/2tsp Yeast                                                                                                      
  •  Water needed                                                                                                                                              

*Mix all the above ingredients with enough water and leave for 20 minutes before frying.

Paste Mee Goreng Mamak:

  • 2 tbsp Paste Sambal                                                                                                            
  • 1/2tsp Curry Powder                                                                                                      
  • 2 tbsp Vegetarian oyster sauce                                                                                                    
  • 2 tbsp Chili Sauce                                                                                                             
  • 2 tbsp Tomato Sauce                                                                                                       
  • 2 tbsp Salted soy sauce                                                                                                  
  • 1 tbsp dark soy sauce                                                                                                      
  • 2 tbsp groundnuts                                                                                               
  • 1 tbsp Dhal-toast beans and blend

Mee Goreng Mamak:

  • 4tbsp cooking oil                                                                                                             
  • 2 nos garlic                                                                                                   
  • 3 bird’s eye chillies                                                                                                        
  • 2 onion                                                                                                
  • 1 green chilli                                                                                                      
  • 1 tomato                                                                                                            
  • 1 boiled potato                                                                                                
  • 2pcs tofu (1 fry, 1 crumble)                                                                                                        
  • 5 pcs taupok                                                                                                       
  • ½ cup water                                                                                                   
  • 400g Yellow Mee                                                                                                
  • 1 stalk mustard greens                                                                                                             
  • 1 handful beansprouts

Garnishing:

  • Coriander leaves                                                                                                              
  • 4 slices cucumber                                                                                                              
  • 4 slice Tomato                                                                                                   
  • 2 tbsp Fried onions                                                                                                          
  • 2 slice calamansi              

Cooking method:

  1. Saute Garlic, Red onion, fried noodle paste mamak.                                                         
  2. Add tomatoes, boiled potatoes, taupok, tofu, salt if necessary and a cup of water, let it boil for a while.                                                                               
  3. Add the noodles and fry, add the mustard greens before turning off the heat and fry for a while.                                                                 
  4. 5.Sprinkle coriander leaves, red chilli, fried onion, musk lime, cucumber and tomato and ready to serve.

bahan – bahan cucur kucai :

  • 1 cawan tepung gandum                                                                                                              
  • 1 genggam daun kucai                                                                                                   
  • 2 biji bawang merah                                                                                                        
  • 1/2 sudu kecil garam                                                                                                   
  • 1/2 sudu kecil gula                                                                                                        
  • 1 sudu kecil udang kering sayuran                                                                                                          
  • 1/3 sudu kecil serbuk kunyit                                                                                                     
  • 1/2 sudu kecil yis                                                                                                           
  • Air secukupnya                                                                                                 

*Campur semua bahan – bahan di atas dengan air yg secukupnya dan biar 20min sebelum goreng   

Pes mee goreng mamak:

  • 2 sudu besar pes sambal                                                                                                            
  • 1/2 sudu kecil serbuk kari                                                                                                          
  • 2 sudu besar sos tiram vegetarian                                                                                                          
  • 2 sudu besar sos cili                                                                                                     
  • 2 sudu besar sos tomato                                                                                                            
  • 2 sudu besar kicap masin                                                                                                           
  • 1 sudu besar kicap pekat                                                                                                            
  • 2 sudu besar kacang tanah                                                                                                        
  • 1 sudu besar kacang dhal *disangai dan diblend

Mee goreng mamak:

  • 4 sudu besar minyak masak                                                                                                      
  • 2 ulas bawang putih                                                                                                       
  • 3 biji cili padi                                                                                                     
  • 2 biji bawang merah                                                                                                       
  • 1 biji cili hijau                                                                                                    
  • 1 biji tomato                                                                                                     
  • 1 biji kentang rebus                                                                                                        
  • 2 keping tauhu   *1 goreng, 1 hancurkan                                                                                                
  • 5 keping taupok                                                                                                      
  • ½  air                                                                                                    
  • 400g mee kuning                                                                                                               
  • 1 tangkai sayur sawi                                                                                                       
  • 1 genggam Taugeh          

Hiasan:

  • Daun ketumbar                                                                                                
  • 4 hirisan timun                                                                                                      
  • 4 hirisan tomato                                                                                                   
  • 2 sudu besar bawang goreng                                                                                                    
  • 2 biji limau kasturi

Cara memasak:

  1. Tumis bawang putih, bawang merah, pes mee goreng mamak.                                    
  2. Masukkan tomato, kentang yg dah rebus, taupok, tauhu, garam jika perlu dan secawan air, biar mendidih sebentar.                                                                        
  3. Masukkan mee dan goreng, masukkan sayur sawi sebelum tutup api dan goreng sekejap.                                                               
  4. Tabur daun ketumbar, Cili merah, Bawang goreng, limau kasturi, timun dan tomato dan sedia dihidang.

After Chef taught the cooking method must tumis the bawang merah dulu baru garlic & ginger follow by chilli paste. From there I can forsee the recipes if they don't follow the right sequence, I doubt it will turn out well. Another method I learnt from Chef is deep frying, the food need to float & the oil must be hot so the food won't be oily & soggy.

I learnt alot from you! Not only on techniques but also the essence each flavour brings to the dish. I'm not a vegan but now I'm more aware of the ingredients and I do keep a look out for them. Through your class, I learnt to appreciate vegetables which I never had growing up such as Black Fungus, lion mane mushrooms, jantung pisang and etc. I also stop buying pasta tomato sauce. Now, all my soup base is from vegetable stock that I learnt from your class. We have also tried plant base milk thanks to you.
