MALA DRYPOT – CHEF DAVE

Ingredients:
- Sauce Ingredients:
- ½ cup Szechuan pepper
- ½ cup dried chilies
- *grind until smooth and filtered.
- 1/8 cup sesame seeds (roasted)
- 1 cup oil
- Sugar and salt as needed
- Stir-fry ingredients:
- ½ slice holland onion
- 1 cup black fungus mushroom
- A little enokii mushroom
- A little lotus root
- A little cauliflower
- A little fucuk
- A little babycorn
- A little broccoli
- A little carrot
- A few stalks celery
- *you can add other vegetables according to your taste.
Cooking method:
- Sauce :
- Grind dry chili and szechuan pepper until smooth then filter.
- Put the powder into a jar.
- Add the roasted sesame seeds, a pinch of salt and sugar. Close the jar and shake.
- Pour into another bowl. Set aside.
- Heat the oil in a pan and let it heat up.
- Then pour into a bowl and stir well. Set the sauce aside first.
- Stir-fry ingredients:
- Prepare a pan, stir-fry the holland onion until fragrant. Then, add the black fungus mushrooms and all the vegetables of your choice.
- Add a little salt and water. Stir again.
- Add the sauce, enoki mushrooms and mix well.
- Ready to serve.

- Bahan Sos :
- ½ cawan lada Szechuan
- 1 cawan cili kering
- *kisar sehingga halus dan tapis.
- 1/8 cawan biji bijan (sangai)
- 1 cawan minyak
- Gula dan garam secukupnya
- Bahan tumis :
- ½ hirisan bawang holland
- 1 cawan cendawan hitam
- Sedikit cendawan enokii
- Sedikit akar teratai
- Sedikit bunga kobis
- Sedikit fucuk
- Sedikit jagung muda
- Sedikit brokoli
- Sedikit lobak merah
- Sedikit batang saderi
- *boleh tambah sayur lain mengikut citarasa anda.
Cara memasak:
- Sos:
- Kisar cili kering dan lada szechuan sehingga halus kemudian tapis.
- Masukkan serbuk ke dalam balang kecil.
- Masukkan biji bijan yang dah sangai, secubit garam dan gula. Tutup balang kecil tersebut dan goncang. Biarkan ia sebati.
- Tuang ke dalam mangkuk lain. Ketepikan.
- Panaskan minyak di dalam kuali dan biarkan ia panas.
- Kemudian tuang ke dalam mangkuk dan kacau sebati. Ketepikan sos dulu.
- Bahan tumis:
- Sediakan kuali, tumis bawang holland kacau sehingga naik bau. Kemudian, masukkan cendawan hitam dan semua sayur pilihan anda.
- Masukkan sedikit garam dan air. Kacau lagi.
- Masukkan sos tadi secukupnya, cendawan enoki dan kacau sebati.
- Sedia untuk dihidang.
