LO HAN CHAI – CHEF DAVE

Serving: 3 – 4 Servings
Ingredients:
- 30g dried shitake mushrooms (soaked and chopped)
- 5g black fungus mushrooms (soaked)
- 30g su hun/glass noodle
- 2 inches ginger (julienne cut)
- 2 pcs napa cabbage (cut into small pieces)
- 1 carrot (medium size, julienne cut)
- 2 tbsp oil
- A little fresh shitake mushroom (sliced)
- 2 tsp light soy sauce
- 1 tsp dark soy sauce
- 1 tsp sugar
- ½ tsp salt
- 125ml shitake mushroom soaking water
- 3 cubes nam yu/red fermented bean curd
- 50g fried tofu puff (cut into small pieces)
Cooking method:
- Soak shitake mushrooms first until the mushrooms bloom. Then squeeze and chop shitake mushrooms. Do not throw away the shitake mushroom soaking water.
- Sauté the ginger until fragrant and add the chopped shitake mushrooms.
- Add shitake mushroom soaking water, nam yu/red fermented bean curd and let it boil for a while.
- Add light soy sauce, dark soy sauce and vegetarian oyster sauce. Stir well.
- Add black fungus mushrooms, fresh shitake mushrooms, carrots, napa cabbage, su hun, fried tofu puff, sugar and salt. Stir well and ready to serve.

Bahan – bahan:
- 30g cendawan shitake kering(rendam dan potong cincang)
- 5g cendawan hitam (rendam)
- 30g suhun
- 2 inchi halia (potong julienne)
- 2 keping kobis cina (potong kecil)
- 1 lobak merah (saiz sederhana, potong julienne)
- 2 sudu besar minyak
- Sedikit cendawan shitake segar(hiris)
- 2 sudu kecil kicap masin soya
- 1 sudu kecil kicap pekat soya
- 1 sudu kecil gula
- ½ sudu kecil garam
- 125ml air rendaman cendawan shitake
- 3 kiub nam yu/red fermented bean curd
- 50g tauhu goreng (potong kecil)
Cara memasak:
- Rendam cendawan shitake dahulu sehingga cendawan kembang. Kemudian perah dan cendawan shitake dipotong cincang. Air rendaman cendawan shitake jangan buang.
- Tumis halia sehingga naik bau dan masukkan cendawan shitake yang telah di cincang.
- Masukkan air rendaman cendawan shitake, nam yu/red fermented bean curd dan biarkan ia mendidih sekejap.
- Masukkan kicap masin soya, kicap pekat soya dan sos tiram vegetarian. Kacau sebati.
- Masukkan cendawan hitam,cendawan shitake segar, lobak merah, kobis cina, su hun, tauhu goreng, gula dan garam . Kacau sebati dan sedia untuk dihidang.
