KEERAI KARI | KARI BAYAM – CHEF DAVE
Preparation time: 10 Minutes
Cooking time: 15 Minutes
Serving: 4 – 5 Servings
Ingredients:
- 50g spinach
- 50g manathakkali leaves
- 50g roselle leaves
- ½ cup dhal
- Water as needed
- 3 bird’s eye chilies
- ½ eggplant (green, cut into wedges)
- ½ potato (remove the skin, cut into small pieces)
- 1 tomato (cut into small pieces)
- ½ tsp turmeric
- 1 tsp cumin powder
- A pinch salt
- A little oil
Ingredients to Stir-Fry:
- 1 tsp mixed fenugreek
- 2-3 small onion (sliced)
- 2-3 dried chilies (cut into small pieces)
- 2 cloves garlic
- A little oil
- ½ cup coconut milk
- Tamarind *optional if you do not have roselle leaves, you can replace it with the ingredient
- (the size of a lemon, dissolve with water)
Cooking method:
- Prepare a high pressure cooker, add dhal, water, eggplant, tomato, bird’s eye chili, turmeric powder, white cumin powder, salt and a little oil. Let it cook until soft.
- Add mannathakali leaves , roselle leaves and spinach. Stir well and let it boil and turn off the heat.
- Grind the curry and don’t make it too smooth like in the video. Set aside.
- Prepare another pot. Stir-fry mixed fenugreek, small onion, dried chilies, and garlic, stir until fragrant.
- Then, add the ground keerai curry. stir again.
- Then, add coconut milk and stir for a while. Adjust taste and ready to serve.

Hidangan: 4 – 5 Orang
Bahan – bahan:
- 50g bayam
- 50g pucuk meranti
- 50g Sayur asam/daun rozel
- ½ cawan dhal
- air secukupnya
- 3 cili padi
- ½ biji terung bulat (hijau, potong wedges)
- ½ biji ketang(buang kulit, potong kecil)
- 1 tomato(potong kecil)
- ½ sudu kecil kunyit
- 1 sudu kecil serbuk jintan putih
- Secubit garam
- Sedikit minyak
Bahan – bahan Tumis:
- 1 sudu kecil halba campur
- 2-3 biji bawang merah kecil (hiris)
- 2-3 cili kering(potong kecil)
- 2 ulas bawang putih
- Sedikit minyak
- ½ cawan santan
- Asam jawa *pilihan sekiranya tiada sayur asam/daun rozel boleh gantikan dengan bahan tersebut (sebesar saiz limau kasturi , larutkan bersama air)
Cara memasak:
- Sediakan periuk tekanan tinggi, masukkan dhal, air, terung bulat, tomato, cili padi, serbuk kunyit, serbuk jintan putih, garam dan sedikit minyak. Biarkan ia masak sehingga empuk.
- Masukkan daun pucuk meranti, sayur asam dan bayam. Kacau sebati dan biarkan ia mendidih dan tutup api.
- Kisar kari tersebut dan jangan terlalu halus seperti di dalam video. Ketepikan.
- Sediakan periuk lain. Tumis halba campur, bawang merah kecil, cili kering dan bawang putih, kacau sehingga naik bau.
- Kemudian, masukkan keerai kari yang telah kisar tadi . kacau lagi.
- Lepastu,masukkan santan dan kacau setika. Adjust rasa dan sedia untuk dihidang.
