INDIAN STYLE PUMPKIN VEGAN RECIPE

Serving: 4 Servings
Ingredients:
- 3 tbsp cooking oil.
- 1 tsp mustard seed.
- 3 nos dried chili.
- 2 stalk curry leaves.
- 1 nos green chili.
- 1 nos shallots.
- 1 tbsp ginger & garlic.
- 1 tbsp chili powder.
- 1 nos tomato.
- 2 tbsp tomato puree.
- 1 cup water.
- 300g pumpkin.
- 50ml tamarind juice.
- Salt as needed.
- 1 tsp brown sugar.
Cooking method:
- Saute the mustard seed, curry leaves, green chili, dried chili, shallots, ginger and garlic until golden brown.
- Add in chili powder and continue saute, then add in tomato and tomato puree and very small amount of water.
- Add in pumpkin, add in 1 cup of water and adjust seasoning and let it braise.
- Once the sauce reduced check if the pumpkin is soft, or else add some water.
- Once pumpkin is soft is ready to serve with some chopped coriander as garnishing.
- Ready to serve.

Bahan – bahan:
- 3 sudu besar minyak masak.
- 1 sudu kecil biji sawi.
- 3 biji cili kering.
- 2 tangkai daun kari.
- 1 biji cili hijau.
- 1 biji bawang merah.
- 1 sudu besar halia & bawang putih.
- 1 sudu besar serbuk cili.
- 1 biji tomato.
- 2 sudu besar tomato puree.
- 1 cawan air.
- 300g labu.
- 50ml jus asam jawa.
- Garam mengikut keperluan.
- 1 sudu kecil gula perang.
Cara memasak:
- Tumiskan biji sawi, daun kari, cili hijau, cili kering, bawang merah, halia dan bawang putih hingga perang keemasan.
- Masukkan serbuk cili dan teruskan menumis, kemudian masukkan tomato dan tomato puri dan sedikit air.
- Masukkan labu, masukkan 1 cawan air dan sesuaikan perasa dan biarkan mendidih
- Setelah sos berkurangan periksa sama ada labu lembut, atau tambah sedikit air.
- Setelah labu empuk sedia untuk dihidangkan bersama ketumbar cincang sebagai hiasan.
- Sedia untuk dihidangkan.
