CHRISTMAS PUDDING

Christmas Pudding Vegan Recipe

Preparation time: 30 minutes
Cooking time: 3 hours
Serving: 12 – 14 portion

Ingredients:

  • 180g dried fig
  • 125g margarine
  • 200g chopped figs
  • 350g mix dried fruits
  • 170g brown sugar
  • 100g breadcrumbs
  • 100g self rising flour
  • 1/4 tsp cinnamon powder
  • 1/4 tsp nutmeg powder
  • 1 nos shredded green apple
  • 75ml soy milk (for non halal version can use Rum)
  • Icing sugar

Cooking method:

  • Grease a 2-litre pudding bowl with dairy-free margarine, then line the base with a circle of baking parchment. Grease a large sheet of baking parchment, then lay it on top of a large sheet of foil, marble side up. Fold a pleat in the middle of each sheet
  • Roughly chop 125g of the figs and set aside. Put the remaining figs, the dairy-free margarine and the rum into a large food processor and whizz until smooth-ish, then scrape into a large mixing bowl. Tip in the chopped figs, sultanas, raisins, grated apple, sugars, breadcrumbs, flour and allspice. Stir everything together, then spoon into your pudding basin
  • Cover with the buttered paper-foil sheet, tie with string and trim. Lower into a large saucepan, with upturned saucers or scrunched- up bits of foil in the bottom (so the pudding doesn’t touch the bottom), then fill the pan with enough boiling water from the kettle to come halfway up the sides of the bowl. Cover with a lid and simmer for 3 hours, topping up the water as needed. Remove and leave to cool. Ready to serve.

Bahan-bahan:

  • 180g buah tin kering
  • 125g marjerin
  • 200g buah tin cincang
  • 350g campuran buah-buahan kering
  • 170g gula perang
  • 100g serbuk roti
  • 100g tepung berserbuk penaik
  • 1/4 sudu kecil serbuk kayu manis
  • 1/4 sudu kecil serbuk pala
  • 1 biji epal hijau diparut
  • 75ml susu soya (untuk versi bukan halal, boleh guna Rum)
  • Gula aising

Langkah-langkah menyedikan:

  1. Griskan mangkuk puding 2 liter dengan marjerin bebas tenusu, kemudian alaskan tapaknya dengan bulatan parchment pembakar. Griskan sekeping kertas pembakar yang besar, kemudian letakkan di atas kepingan foil besar, sisi marmar ke atas. Lipat lipatan di tengah setiap helaian
  2. Cincang kasar 125g buah tin dan ketepikan. Masukkan baki buah tin, marjerin tanpa tenusu dan rum ke dalam pemproses makanan yang besar dan pukul sehingga licin, kemudian kikis ke dalam mangkuk adunan yang besar. Masukkan buah tin yang dicincang, sultana, kismis, epal parut, gula, serbuk roti, tepung dan lada sulah. Kacau semuanya, kemudian masukkan ke dalam besen puding anda
  3. Tutup dengan kepingan kertas kerajang mentega, ikat dengan tali dan trim. Turunkan ke dalam periuk besar, dengan piring terbalik atau kepingan kerajang yang direntap di bahagian bawah (supaya puding tidak menyentuh bahagian bawah), kemudian isikan kuali dengan air mendidih yang cukup dari cerek untuk sampai separuh bahagian tepi periuk. mangkuk. Tutup dengan penutup dan reneh selama 3 jam, tambahkan air mengikut keperluan. Angkat dan biarkan sejuk. Sedia untuk dihidangkan

After Chef taught the cooking method must tumis the bawang merah dulu baru garlic & ginger follow by chilli paste. From there I can forsee the recipes if they don't follow the right sequence, I doubt it will turn out well. Another method I learnt from Chef is deep frying, the food need to float & the oil must be hot so the food won't be oily & soggy.

I learnt alot from you! Not only on techniques but also the essence each flavour brings to the dish. I'm not a vegan but now I'm more aware of the ingredients and I do keep a look out for them. Through your class, I learnt to appreciate vegetables which I never had growing up such as Black Fungus, lion mane mushrooms, jantung pisang and etc. I also stop buying pasta tomato sauce. Now, all my soup base is from vegetable stock that I learnt from your class. We have also tried plant base milk thanks to you.
