BEEF LASAGNA WITHOUT BEEF

Beef Lasagna without Beef Vegan Recipe

Preparation time: 20 minutes
Cooking time: 20 minutes + 45 minutes (baking)
Serving: 4 large servings

Ingredients:

  • 100g harvest gourmet mince meat
  • 350g prego tomato coulis
  • 4 tbsp olive oil
  • 3 tbsp onion (chopped)
  • 3 tbsp carrot (chopped)
  • 2 tbsp celery (chopped)
  • Fresh thyme
  • 3 tbsp cashews (soaked)
  • 150g firm tofu (patted dry with paper towels)
  • 1 tbsp nutritional yeast
  • 2 tbsp fresh lemon juice
  • Salt as needed
  • 3/4 tsp dried basil
  • 3/4 tsp oregano
  • 1/2 tsp garlic powder
  • 50g baby spinach
  • 6 – 8 sheet lasagne noodles

Cooking method:

  • First, sauté onion, carrot, celery, and fresh thyme in olive oil
  • Add in tomato cousin and adjust seasoning. Once mincemeat cooked kept aside
  • Make the Cashew-Tofu Ricotta: Add the cashews to a food processor and process until fine and crumbly. Then add the tofu in chunks, nutritional yeast, lemon juice, salt, basil, oregano, and garlic powder to the food processor. Pulse until well combined and smooth
  • Assembling the lasagne as shown in the video
  • Cover tightly with foil and let it rest in chiller for 4 hours or overnight for better taste
  • Bake for 30min with foil and 15min without foil and let cool at least 15 minutes before cutting and serving

Hidangan: 4 hidangan besar

Bahan-bahan:

  • 100g daging kisar harvest gourmet
  • 350g coulis tomato prego
  • 4 sudu besar minyak zaitun
  • 3 sudu besar bawang (dipotong kecil)
  • 3 sudu besar lobak merah (dipotong kecil)
  • 2 sudu besar saderi (dipotong kecil)
  • Daun thyme segar
  • 3 sudu besar kacang gajus (direndam)
  • 150g tauhu (dialas kering dengan tisu dapur)
  • 1 sudu besar yis makanan
  • 2 sudu besar jus limau
  • Garam mengikut keperluan
  • 3/4 sudu kecil basil kering
  • 3/4 sudu kecil oregano
  • 1/2 sudu kecil serbuk bawang putih
  • 50g bayam kecil
  • 6 – 8 helai kepingan lasagna

Langkah-langkah menyedikan:

  1. Tumis bawang besar, lobak merah, saderi dan thyme segar dalam minyak zaitun terlebih dahulu
  2. Masukkan coulis tomato dan tambah perasa jika diperlukan, apabila daging kisar telah masak, ketepikan dahulu
  3. Buat Kacang gajus-Tauhu Ricotta: Masukkan gajus ke dalam pengisar makanan dan kisar sehingga halus dan rapuh. Kemudian masukkan tauhu dalam bahan yang dikisar, yis ,jus limau, garam, basil, oregano dan serbuk bawang putih ke dalam pengisar. Kisar sehingga sebati dan cukup halus
  4. Susun kepingan lasagna seperti yang ditunjukkan dalam video
  5. Tutup rapat dengan kerajang aluminium dan simpan di dalam peti sejuk selama 4 jam atau semalaman untuk rasa yang lebih sedap
  6. Bakar selama 30min dengan kerajang dan 15min tanpa kerajang dan biarkan sejuk sekurang-kurangnya 15 minit sebelum dipotong dan dihidangkan

After Chef taught the cooking method must tumis the bawang merah dulu baru garlic & ginger follow by chilli paste. From there I can forsee the recipes if they don't follow the right sequence, I doubt it will turn out well. Another method I learnt from Chef is deep frying, the food need to float & the oil must be hot so the food won't be oily & soggy.

I learnt alot from you! Not only on techniques but also the essence each flavour brings to the dish. I'm not a vegan but now I'm more aware of the ingredients and I do keep a look out for them. Through your class, I learnt to appreciate vegetables which I never had growing up such as Black Fungus, lion mane mushrooms, jantung pisang and etc. I also stop buying pasta tomato sauce. Now, all my soup base is from vegetable stock that I learnt from your class. We have also tried plant base milk thanks to you.
