BAINGAN MASALA

BAINGAN MASALA VEGAN RECIPE

Preparation time: 20 Minutes
Cooking time: 40 Minutes
Serving: 4 Servings

Ingredients:

Masala paste:

  • 5tbsp Cooking oil
  • 4cloves Garlic ( cut slice )
  • 1inch Ginger ( just tap )
  • 2nos Green chili ( cut slice )
  • 3big Onion ( cut slice )
  • 10g Cashew nut
  • 1tsp Turmeric powder
  • 1tsp Cumin powder
  • 1tsp Chili powder
  • 3tbsp Curry powder
  • 3 Tomato( cut into 4 part for each tomato )
  • 120g Tomato puree
  • 1cup Water

Baingan Masala:

  • 2tbsp Cooking oil
  • 1/2tsp Mix fenugreek
  • 1 Cinnamon stick
  • 2 Star anise
  • 1 stalk Curry leaves
  • 1/2nos Onion ( cut slice )
  • Masala paste ( 1/3 from above recipe)
  • 1cup Water
  • 60g Fried aubergine( cut medium size )
  • Coriander leaves (for garnishing)

      Cooking method:

      Masala paste:

      1. Saute garlic, ginger, green chili, onion and cashew nut until golden brown.            
      2. Slow the fire and add in turmeric powder, cumin powder, chili powder, curry powder and stir well and let it cook for few minutes. Make sure don’t burnt the spice and maintain slow fire.      
      3. Add in tomato, tomato puree and water and let it reduced to thick consistency.  
      4. Once reduced, remove from the fire and let it cool down.             
      5. Use a processor to blend it into sauce consistency and ready to use. (can keep in freezer for 2 months).

        Baingan Masala:

        1. Saute mix fenugreek /halba, cinnamon stick, star anise, curry leaves, onion until golden brown    
        2. Add in masala paste [1/3 from above recipe] and a cup of water.                
        3. Add in fried aubergine and let it braise in the sauce.                         
        4. Once reduced and getting dry it’s ready to serve.                               
        5. Garnish with some fresh coriander and serve with humble white rice.                                      

        Masa penyediaan: 20 Minit
        Masa memasak: 40 Minit
        Hidangan: 4 Orang

        Pes Masala:

        • 5 sudu besar Minyak masak
        • 4 ulas Bawang putih (hiris)
        • 1 inci Halia (ketuk sahaja)
        • 2 Cili hijau (potong dadu)
        • 3 besar bawang besar (hiris)
        • 10g Kacang gajus
        • 1 sudu kecil Serbuk kunyit
        • 1 sudu kecil Serbuk jintan manis
        • 1 sudu kecil Serbuk cili
        • 3 sudu besar Serbuk kari
        • 3 Tomato (potong 4 bahagian untuk setiap tomato)
        • 120g Pure tomato
        • 1 cawan Air

        Baingan Masala:

          • 2 sudu besar Minyak masak        
          •  1/2 sudu kecil Campuran halba       
          • 1 Batang kayu manis      
          • 2 Bunga lawang
          • 1 tangkai Daun kari         
          • 1/2 biji  Bawang besar (dihiris)   
          • Pes masala (1/3 dari resipi di atas)           
          • 1 cawan Air        
          •  60g Terung goreng (potong saiz sederhana)        
          • Daun ketumbar (untuk hiasan)

          Langkah-langkah menyedikan:

          Pes Masala:

          1. Tumis bawang putih, halia, cili hijau, bawang besar dan kacang gajus sehingga perang keemasan.                
          2. Perlahankan api dan masukkan serbuk kunyit, serbuk jintan manis, serbuk cili, serbuk kari dan kacau rata dan biarkan masak beberapa minit. Pastikan rempah tidak hangus dan kekalkan api perlahan.                                               
          3. Masukkan tomato, tomato puri dan air dan biarkan ia menjadi pekat.                                                      
          4. Setelah menyusut, keluarkan dari api dan biarkan ia sejuk.                                                            
          5. Gunakan pemproses untuk mengadunnya menjadi konsisten sos dan sedia untuk digunakan. (boleh simpan dalam peti ais selama 2 bulan).

          Baingan Masala:

          1.   Tumiskan gaul halba/halba, kayu manis, bunga lawang, daun kari, bawang besar hingga kekuningan
          2. Masukkan pes masala [1/3 daripada resipi di atas] dan secawan air.                                          
          3. Masukkan terung goreng dan biarkan mendidih dalam sos.                                           
          4. Setelah berkurangan dan kering sedia untuk dihidangkan.                                             
          5. Hiaskan dengan sedikit ketumbar segar dan hidangkan bersama nasi putih sederhana.

          After Chef taught the cooking method must tumis the bawang merah dulu baru garlic & ginger follow by chilli paste. From there I can forsee the recipes if they don't follow the right sequence, I doubt it will turn out well. Another method I learnt from Chef is deep frying, the food need to float & the oil must be hot so the food won't be oily & soggy.

          I learnt alot from you! Not only on techniques but also the essence each flavour brings to the dish. I'm not a vegan but now I'm more aware of the ingredients and I do keep a look out for them. Through your class, I learnt to appreciate vegetables which I never had growing up such as Black Fungus, lion mane mushrooms, jantung pisang and etc. I also stop buying pasta tomato sauce. Now, all my soup base is from vegetable stock that I learnt from your class. We have also tried plant base milk thanks to you.
