ALMOND KURMA – CHEF DAVE

ALMOND KURMA – CHEF DAVEv

Preparation time: 15 Minutes
Cooking time: 10 Minutes
Serving: 40 – 50 pcs

Ingredients:

  • Ingredients A:
    • 500g Tunisia dates
    • Almonds as needed (dry roasted)
    • Almond nibs as needed
    • Peanut butter
    • baking paper cup (size 8cm/9cm)
  • Ingredients B:
    • 200g dark chocolate compound
    • 1 tbsp vegan butter

Cooking method:

  1. Ingredients A:
    • Dry roasted the almonds first. (Like cooking the almond london cookies). Set aside and let it cool.
    • Dates cut in half to remove the seeds. Then, put a little peanut butter on each date, not too much.
    • Then put the almonds in the dates. Easier to understand, where date seeds are replaced with almonds.
    • Close the dates nicely so that it is easy to place on the baking paper cup. Set aside.
  2. Ingredients B:
    • Double boil all ingredients B until melt.
    • Then let it warm a little and pour chocolate on each baking paper cup that has been filled with dates.
    • Sprinkle some almond nibs on top.
    • Then put it in the chiller for a while for the chocolate to harden and be ready to eat.

Masa penyediaan: 15 Minit
Masa memasak: 10 Minit
Hidangan: 40 – 50 pcs

Bahan – bahan:

  • Bahan A:
    • 500g kurma tunisia (yang keras sedikit)
    • kacang badam secukupnya
    • badam dadu/badam cincang secukupnya
    • mentega kacang
    • cawan kertas pembakar (saiz 8cm/9cm)
  • Bahan B:
    • 200g dark coklat compound
    • 1 sudu besar mentega vegan

Cara memasak:

  1. Untuk bahan A:
    • Kacang badam di sangai dahulu.(macam nak masak kuih almond london tu). Ketepikan dan biarkan ia sejuk.
    • Kurma di belah dua untuk keluarkan biji. Lepastu, masukkan mentega kacang sedikit pada setiap kurma, jangan telalu banyak.
    • Lepastu masukkkan kacang badam dalam kurma. Lebih mudah faham, tempat biji kurma digantikan dengan kacang badam.
    • Tutup kemas kurma tersebut supaya mudah untuk letak pada cawan kertas pembakar. Ketepikan.
  2. Untuk bahan B:
    • Double boil semua bahan B sampai ia cair.
    • Kemudian biarkan ia suam sedikit lalu tuangkan coklat pada setiap cawan kertas pembakar yang telah di isi kurma tadi.
    • Taburkan sedikit kacang badam cincang/kacang badam dadu di atas.
    • Lepas tu masuk dalam peti ais sekejap bagi coklat tu keras dan sedia untuk dimakan.

After Chef taught the cooking method must tumis the bawang merah dulu baru garlic & ginger follow by chilli paste. From there I can forsee the recipes if they don't follow the right sequence, I doubt it will turn out well. Another method I learnt from Chef is deep frying, the food need to float & the oil must be hot so the food won't be oily & soggy.

I learnt alot from you! Not only on techniques but also the essence each flavour brings to the dish. I'm not a vegan but now I'm more aware of the ingredients and I do keep a look out for them. Through your class, I learnt to appreciate vegetables which I never had growing up such as Black Fungus, lion mane mushrooms, jantung pisang and etc. I also stop buying pasta tomato sauce. Now, all my soup base is from vegetable stock that I learnt from your class. We have also tried plant base milk thanks to you.
