KARI DAUN KARI | CURRY LEAVES CURRY – CHEF DAVE

Serving: 5 – 7 Servings
Ingredients:
- 2 handfuls curry leaves
- A little oil
- ½ cup small onion
- 1/3 cup garlic
- 10 dry chilies
- 1 tsp mustard seeds
- 1 tsp australia dhall
- 1 tsp urad dhall
- ½ tsp fenugreek
- 2 tbsp coriander seed powder
- Tamarind (a large size of a lime, dissolve in 2 cups of water)
- A pinch turmeric powder
- Salt as needed
- A pinch of asafoetida powder
- Brown sugar as needed
Cooking method:
- Sauté small onions, garlic, dried chilies, and curry leaves first. Lift and set aside. Let it cool.
- Then, put it in a blender. You can put just a little water. grind until smooth. Set aside.
- Prepare a pot, add a little oil and sauté mustard seeds, fenugreek, dhall and urad dhall. Stir until aromatic.
- Turn off the heat, add coriander seed powder, turmeric powder, tamarind water and curry paste that has been ground earlier. Stir well
- Open the heat, add asafoetida powder, brown sugar and salt. Stir well and let it boil.
- Adjust taste and ready to serve.

Bahan – bahan:
- 2 genggam daun kari
- Sedikit minyak
- ½ cawan bawang merah kecil
- 1/3 cawan bawang putih
- 10 cili kering (campur dengan cili kering gemuk)
- 1 sudu kecil biji sawi
- 1 sudu kecil kacang dhal
- 1 sudu kecil kacang ulunthu/kacang thosai
- ½ sudu kecil halba
- 2 sudu besar serbuk biji ketumbar
- Asam jawa (saiz besar limau kasturi, larutkan dengan 2 cawan air)
- Secubit serbuk kunyit
- Garam secukupnya
- Secubit serbuk Inggu
- Gula perang secukupnya
Cara memasak:
- Tumis dahulu bawang kecil, bawang putih, cili kering dan daun kari.Angkat dan ketepikan. Biarkan ia sejuk.
- Lepastu, masukkan dalam pengisar. Boleh letak air sedikit sahaja.kisar sehingga halus. Ketepikan.
- Sediakan periuk, masukkan sedikit minyak dan tumis biji sawi, halba, kacang ulunthu dan kacang dhal. Kacau sehingga naik bau.
- Tutupkan api,masukkan serbuk biji ketumbar, serbuk kunyit, air asam jawa, dan pes daun kari yang telah kisar tadi. Kacau sebati
- Buka api, masukkan serbuk inggu, gula perang dan garam. Kacau sebati dan biarkan ia mendidih.
- Adjust rasa dan sedia untuk dihidang.
